My friend Kim is doing the green smoothie challenge from this site, and I'm joining in! I don't know if I'll do it everyday, but that is the goal. The idea is to get more fruits and especially green veggies into your diet. Today I made my first green smoothie! It's made with spinach, green apple, banana, apple juice and ice. It looks kind of like a science experiment, but tastes really good. I had the whole thing for lunch along with a turkey sandwich and it was surprisingly filling. Whenever I'm nursing a baby I'm starving most of the time (contrasted with having to force myself to eat while pregnant), but I feel really good right not. And if you know me, you know I have issues with food textures. This smoothie was a little "pulpy", but not bad at all. This one gets the thumbs up from me!Monday, September 8, 2008
