
I love hummus. We used to have a great little Greek restaurant in town that served the best hummus around, but they have been closed for several years now. *sigh* In the meantime I've been searching for a good recipe so I can make my own, and I have finally found one that I like. (There are a LOT of bad hummus recipes out there, who knew?) This is a good basic hummus recipe.
2 15 oz cans garbanzo beans (aka chick peas, ceci beans)
1/2 cup tahini (this is a sesame seed paste - I found some at our natural foods store)
3 cloves garlic pressed
6 tbsp lemon juice (I used juice from a bottle and it was fine)
1 tsp ground cumin
salt and pepper to taste (I suggest starting with 1/2 tsp salt)
drain the beans and reserve liquid for blending
add all ingredients + 1/4 cup bean liquid to blender or food processor and mix
add bean liquid as needed for desired consistency
Voila'! Serve with bread or veggies and a drizzle of olive oil
Very simple and very good! Lots of protein and the baby loved it too!
