I was at a little get together recently and eating what I thought was some kind of veggie quiche which was really good. When my friend Sonja told me it was zucchini pie I had to get the recipe. You see, we're trying to add more veggies into our diet, but neither one of us likes zucchini....
....unless it's zucchini pie!
Here's the recipe.
3 c grated zucchini
1 small onion, chopped
1 c all-purpose flour
1 c grated provolone cheese
3 eggs, beaten
1/4 c vegetable oil
4 tbsp grated Parmesan cheese
2 tsp chopped basil
1 tsp salt
1/2 tsp black pepper
Preheat oven to 350'. Combine all ingredients in a large bowl, reserving 1 tbsp of Parmesan. Spoon mixture into a 10-inch round pie plate coated with cooking spray. Bake for 45-50 minutes or until golden brown. Sprinkle with reserved Parmesan. Cool 10-15 minutes before slicing.
Enjoy! (How could you not with so much provolone???)
